Nestled in the golden quiet of the Adelaide Hills, Ondeen Farm became the setting for a truly unique Tasting Australia experience—one that celebrated not only food, but the small, essential creatures that help bring it to life.
Guests were invited into the world of beekeeping with Jake Leske of Queens Cut Honey, whose quiet passion and deep knowledge offered a rare glimpse into the life of an apiarist. Standing in the field surrounded by hives and soft light, the conversation shifted from technique to relationship—to the care and instinct required to work in harmony with bees.
After the masterclass, a long table set beside the dam awaited. Under a canopy of trees and gentle autumn air, a three-course lunch unfolded—each dish thoughtfully built around the layered, evolving flavours of honey. From floral, just-pulled honeycomb to fermented honey infused with summer garlic, each bite told a story of place, process, and patience.
The menu was elevated by local dairy from Tweedvale and paired with seasonal drinks—regional wines, house-made shrubs, and a mead that echoed the landscape itself. This was more than a lunch—it was an invitation to slow down and pay attention, to taste what happens when nature is allowed to lead.
With every course, every glass, every shared moment, this event reminded us of the unseen work of bees and the quiet brilliance of producers who listen closely to the land.
